ENGLISH:
I like the Japanese way of eating cold noodles. Perfect for picnics or packed lunches, and since this dish keeps well for a couple of days you could leave the noodles in the fridge for tomorrow’s lunch. If you want to add some protein, or you want to make it into dinner, serve them with some salmon – works so well.
I tried this recipe for the first time in 2003, 8 years ago, after seeing Nigella Lawson on TV.. (I found it in her summer cookbook.) I always note the date in the corner of the page when I first try new recipes, I suppose I’m quite nostalgic.. I like to think back when I flip through my cookbooks. The summer of 2003 I worked as a flight attendant, and it was also this summer that I got married to my beloved Man 🙂
You’ll need:
(2-4 servings, depending on if it’s part of a meal, or a meal in itself)
75 grams sesame seeds
salt
250 grams soba noodles
2 tsp rice vinegar
2 tbsp soy sauce
2 tsp honey
2 tsp sesame oil
4-5 spring onions, finely sliced
Bring a large pan of water to the boil, add some salt.
Cook the soba noodles according to packet instructions.
Meanwhile, toast the sesame seeds in a dry pan (high heat) until golden.
Transfer to a bowl or plate.
Put some ice into a bowl, then fill it with ice cold water.
When the noodles are done, drain in a colander and put into the bowl with the ice water. (We do this to make them cool as soon as possible, to stop the cooking process/avoid that the noodles get soggy.)
Drain.
Mix together the rice vinegar, soy sauce, honey and sesame oil in a bowl (large enough to fit the noodles later).
Add the noodles and spring onions, mix thoroughly.
Add the sesame seeds and toss again.
Ideally the noodles should now be left to rest for half an hour for the flavours to develop, although this is not absolutely necessary.
